Cherry Crunch
My family has a sour cherry tree that graciously provided us with a bazillion cherries. I asked myself what to do with all of these cherries and it came to me. A cherry crunch! Delicious. Not too sweet. Cherries that burst in your mouth. Crumble topping that is sweet and chewy. Smells like mom's kitchen. You get my point. This crunch was amazing. So here's the recipe! Hope you enjoy this as much as my family did-is :)
Crunch Part
2 cups flour
1.5 cups uncooked oats
2 cups brown sugar
2 tsp cinnamon
1 tsp nutmeg
1 cup melted butter
*Preheat oven to 350 degrees
*Combine everything except for the butter. Once the ingredients are thouroughly combined, add the melted butter and incorporate until everything is wet with the butter(it will be somewhat crumbly.) Place half of this mixture into a 9x13 baking pan. Spread this out until the mixture evenly until it covers the entire bottom of the pan(it will be a pretty thin layer.) Bake this for 10 or 15 minutes until it is "set."
Cherry Part
8 cups sour pitted cherries
2-3 cups sugar(I tend to use around 2.25 cups because my family doesn't like for it to be extremely sweet, but if you like sweet, use the 3 cups of sugar)
8 tbs flour
1 tsp almond extract(optional, but please please use it! It wonderfully complements the cherries.)
2 tsp pure vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
*Carefully combine all of these ingredients. When the bottom layer of the crunch is done, pour the cherry mixture over the top and spread out evenly. Take the remaining uncooked crunch mixture and crumble over the top of the cherries. It should almost, if not completely, cover the top of the cherries. Put back in oven and bake for 60 minutes or so until it is bubbling on the sides. Take out and let cool. Great if served warm or room temperature. Whipped cream or vanilla ice cream complements this beautifully! :) Hope you enjoy!

DeleteO my goodness it was amazing :) My mom made a cherry cobbler thing but it had dough stuff instead of oatmeal on the top. Regardless, they were SO good! No where are all of these healthy options I'm lookin for?!?! :D Love you!
